Powerhouse Muffins

Don't have time to make breakfast every day? Are you looking for a quick snack pre or post workout? These yummy gluten-free muffins will be your GO TO for on-the-go. 


2 Cup plain oats

2 Whole eggs

2 Mashed ripe bananas

2 T Natural peanut butter

1 tsp vanilla extract

1 tsp baking powder

1 tsp ground cinnamon

optional add-ins: berries, dark chocolate chips, protein powder


Pre-heat oven to 350 degrees Fahrenheit. In a bowl mash both bananas. Beat in eggs, peanut butter, and vanilla. Combine oats, cinnamon and baking powder and add to wet mixture. Grease a 12 serving muffin tin and fill 8 with muffin batter (macros are per muffin for 8 total.) Bake for 12-15 minutes,  and let cool for 5 minutes.
