Peanut Butter Banana Bread

We all love a warm fresh baked banana bread or even JUST the smell of one. Here is my gluten free and macro friendly version of my Nana's famous banana bread. Give me a shout if you try this one at home!

Ingredients:

1 Cup Oat Flour

2 Scoops Vanilla Protein Powder

1 tsp Baking Powder

1/4 C Natural Peanut Butter

3 Medium Ripe Bananas

2 Large Eggs

1/4 C Chopped nuts (optional)

Directions:

In a large mixing bowl combine your dry ingredients, oat flour, protein and baking powder. Make a 'well' and add your eggs, mashed bananas and peanut butter. Fold in your (optional) mix-ins such as nuts or berries. Pour into a greased loaf pan and bake at 350 degrees for 50 minutes. Let your banana bread cool for 30 minutes before serving.

Makes 12 servings at a low 130 Cal/serving (Nuts included!)

If you count your macronutrients they are 14g C/ 6g F/ 6g P. This would be a great snack to eat before a workout or after!
